Cool Lime Cheesecake

Ingredients: Graham cracker crumbs- 1 cup Margarine- 3 Tbsp No-Calorie Sweetener- 2 Tbsp 8 oz Reduced-fat cream cheese, softened- 2 each No-Calorie Sweetener- 2/3 cup Egg- 1 each Egg whites- 2 each Grated lime peel- ½ tsp Fresh lime juice- 3 Tbsp |
Serving Size: 1/8 of Cheesecake # Servings: 8 |

Instructions: Combine graham cracker crumbs, butter and 2 Tbsp sweetener in bottom of 8” spring-form pan or 8” cake pan; pat evenly on bottom and ½ inch up the side of the pan. Bake in a preheated 325 degree oven for 8 minutes. Beat cream cheese and 2/3 cup sweetener in medium size bowl until fluffy. Beat in egg, egg whites, lime peel and juice until well blended. Pour cream cheese mixture into prepared crust. Bake in preheated 325 degree oven for 30 to 35 minutes or until the center is almost set. Cool on wire rack. Refrigerate at least 3 hours before serving. |
