Ingredients:
Vegetable oil- 1 tsp
Zucchini, sliced into ½ inch thick- 2 lbs
Whole-wheat bread crumbs, toasted- ½ cup
Fresh parsley, finely chopped- ¼ cup
Unsalted dry-roasted almonds, minced- 2 Tbsp
Parmesan cheese, grated- 1 Tbsp
Fresh oregano, chopped- 1 Tbsp (1 tsp dried)
Garlic clove, minced- 1 each (1/2 tsp bottled garlic)
Black pepper- to taste

1/6 of Recipe

Instructions:
In a large nonstick skillet, heat oil over medium-high heat. Swirl oil. Add zucchini and sauté for 5-8 minutes, or until just tender and lightly browned. Combine remaining ingredients in a medium bowl and add to zucchini. Remove from heat and mix gently.
